To thicken a sauce: 1) make a beurre maniƩ (flour cooked in melted butter), add a little of the sauce to it and then add to the sauce; 2) mix cornstarch and water into a smooth paste, add gradually to the sauce and bring to a boil; 3) add potato flakes to the sauce.
